Breakfast Congee

Congee can be made in the Instant Pot and can be made with meatballs for a savory dinner or lunch, but I also like to make it with a soft boiled egg sometimes for a simple breakfast.
Ingredients
- 200 grams white rice
- 400 grams chicken stock
- 400 grams water
- 4 ounces pickled mustard greens
- 2 ounces cooked duck, chopped
- to taste salt
- 2 soft-boiled egg
- 1 tsp sesame oil

Instructions
- In a clay pot or large saucepan, combine the white rice, chicken stock, and water. Bring to a boil.
- Once boiling, stir in the pickled mustard greens, then reduce the heat to low, cover, and simmer for 20 minutes.
- Stir in the chopped cooked duck, cover, and continue to simmer for another 25 minutes, or until the congee has thickened.
- Ladle the congee into bowls. Top with a soft-boiled egg, a drizzle of sesame oil, and season with salt to taste before serving.
