Breakfast Congee

Congee can be made in the Instant Pot and can be made with meatballs for a savory dinner or lunch, but I also like to make it with a soft boiled egg sometimes for a simple breakfast.

    1. In a clay pot or large saucepan, combine the white rice, chicken stock, and water. Bring to a boil.
    2. Once boiling, stir in the pickled mustard greens, then reduce the heat to low, cover, and simmer for 20 minutes.
    3. Stir in the chopped cooked duck, cover, and continue to simmer for another 25 minutes, or until the congee has thickened.
    4. Ladle the congee into bowls. Top with a soft-boiled egg, a drizzle of sesame oil, and season with salt to taste before serving.
